There was a lot of request for this recipe, so I’m sharing it. Don’t be intimidated by the list of ingredients, it’s fairly easy to make. You can eat this with almond butter or with milk like a granola.
Ingredients
220g grated carrots
1 red apple, grated
160g rolled oats (not porridge oats)
30g raisins
1/2 coarse sea salt
2 tbsp chia seeds
90ml water
550ml almond milk / rice milk
100g sunflower seeds
120g walnuts/pecan nuts
80g coconut sugar / maple syrup / honey
1 tbsp olive oil/coconut oil
Spices:
1 tsp Cinnamon
1/2 tsp Cardamom
1/2 tsp Ginger
1/2 tsp Nutmeg
Method
Start by mixing the chia seeds with water, let it sit for 15 minutes until gel.
Meanwhile, preheat the oven to 180°C. In a large bowl mix the carrots, apple, rolled oats, salt, spices and raisins. Next mix the honey/maple/coconut sugar with the olive oil, walnuts and sunflower seeds.
Grease a baking tray with coconut or olive oil to avoid sticking. Spread the carrot mixture on the tray.
Next, combine the chia gel with the milk to get a liquid consistency. Pour this over the carrot/oat mixture. Finally, spread over the seed & nut topping. Bake for 45 minutes until the walnuts are golden brown and crunchy.
