Pancake and Waffle Mix
A note from us — “Flip it, stack it, love it! Our Gluten-Free Pancake Mix makes every morning feel like Sunday brunch. Light, fluffy, and ready in minutes — no gluten, no fuss, just pure pancake joy for everyone. Easy to make, and irresistibly delicious. Makes 12-14 pancakes. You'll need:
2 eggs
400g milk (regular or rice milk)
28g Olive oil
1 tbsp Apple Cider Vinegar or Fresh lemon juice
Method:
- Start by whisking the eggs with a hand mixer or stand mixer until fluffy.
- Add in the milk, apple cider vinegar or lemon juice and the olive oil, continue whisking until incorporated.
- Pour in all the pancake mix. Stir until smooth.
- Heat a lightly greased pan over medium heat.
- Pour batter (about 1/4 cup per pancake).
- Cook until bubbles form, flip, and cook until golden.
